Sicilian Sauce


Pasta Sauce

Pour Sicilian Sauce over hot pasta and add some fresh, sautéed shrimp, chicken or your choice of vegetables for instant scampi.  Or, for a light Summer version chop up some Tomatoes and fresh Basil mix gently in the pasta and add Sicilian Sauce. Top with fresh grated Parmesan or Romano cheese. 
You can also use our “Herbal Dip Mix” to either zip up your marinara, or even better, blend the “Mix” with some softened cream cheese and add it to the sautéed vegetables and meat for a wonderful creamy primavera. I usually thin it down with a little white wine. 
Use your imagination and HAVE FUN!


Salad Dressing

Sicilian Sauce is wonderful straight out of the bottle but you can also thin it down. Just add one cup of quality olive oil, a half cup of red wine vinegar to full cup of Sicilian Sauce in a shaker bottle or blender.  It will go farther and you will love it just as much. For a real treat add a cup of crumbled Gorgonzola (blue cheese) to the mix. If you like Blue cheese, you will LOVE this version.


Dipping Sauce

Most people use our Sauce straight, especially for vegetables.  You can also pour quality olive oil on a plate, add Sicilian Sauce in center, add a few drops of Balsamic vinegar, swirl and top with grated Parmesan.  Dip with crusty Italian bread. This is a wonderful quick Hors d' Oeuvre. 
Our Herbal Dip Mix in sour cream, cottage cheese, cream cheese or Hummus is also a great Dip or Spread and a great alternative to Ranch Dressing. 


Grilling and Marinade

Sicilian Sauce Can be used on any meat as a marinade or even as a finishing sauce.  Try tossing vegetables in it for grilling or roasting them. Brush it on Kebobs, Shrimp or Fish. (Be gentle with fish or shrimp, you don’t want to “cook it” with the sauce.) The vinegar in the Sauce will help tenderize Lamb, Steaks, Roasts, Chicken or Turkey. You can even use it as a “Steak Sauce.” Use only enough to cover the meat and seal in a “Baggie” for at least 30 minutes but over night is better for Lamb or tougher cuts of meat. You might want to add a little wine as well.
If you are into Rubs for meat Grandma’s RUB is REALLY GOOD! The longer you let it sit on the meat the better the flavor but remember no longer than over night. The “Rubbed” meat works well for grilling, roasting , broiling or baking. The RUB does not tenderize, it is for flavor only.
Try the RUB on ribs. Coat them with the RUB, pat it in and let rest for about an hour. Place them in a pan covered with foil and cook slow at 275° for 2 hours. Then cook uncovered  for 30 minutes to an hour or finish them on the Grill. You won’t even need  BBQ sauce but use it if you need to. One little packet of RUB is enough for 2 Full Racks and 3 Baby Racks.
For shrimp you can also use the Garlic Bread Mix after it has been mixed with Butter. It is exceptional on Grilled Bacon Wrapped Shrimp.


Grilling or Roasted Vegetables

Try brushing or tossing vegetables with the Sauce.  It is wonderful with Grilled Asparagus, Zucchini Eggplant and Summer Squash. I’ve even had people grill Lettuce with it. If you don’t Grill, Roast or Sauté them. You can also use our Herbal Dip Mix to sprinkle on vegetables for roasting.



Sicilian Sauce is the perfect condiment for Tomatoes. Drizzle some over fresh sliced tomatoes and Enjoy!  It will even make store bought winter tomatoes edible. 
Mix a little in with a Tomato, Cucumber Salad. Pour a little over tomatoes, add some bread crumbs and parmesan and Grill or Roast. To make a Brochette, slice a baguette on the diagonal. Brush our Garlic Bread Mix (in Butter) over each slice with a sprinkle of parmesan and lightly toast in the oven. Chop up some Tomatoes and Basil add some Sauce, top the toast and serve, or you can top with some Parmesan and Mozzarella and broil just long enough to melt the cheese. 
For the best Caprese Salad ever, slice a Tomato, top with Sauce and a slice of Baby Mozzarella (you can broil quickly to brown the cheese if you like) and top with a Basil Leaf. You can also just chop everything up and add some sauce for a quick topping for lettuce as a salad.



You can use the sauce directly to sauté but I usually start with butter or olive oil and use the sauce more as a “Finishing Sauce.” This is because we use fresh garlic in the Sauce and it maintains it’s flavor better when only gently cooked.



Try using Sicilian Sauce instead of Soy or other Oriental Sauces. Start with Olive Oil and add the Sauce at the end. It will give your favorite Stir-Fry a whole new flavor and it goes great over rice or noodles. Experiment and have FUN!

NOTE: Each Mix is formulated for it’s specific purpose but they do have other uses

pastaHerbal Dip Mix

This is for making dips and spreads.  Mix with you choice of a creamy base (Plain Yogurt, Sour Cream, Hummus, Cottage Cheese or softened Cream Cheese. Combine entire contents of packet (0.5 oz.) with 2 cups (16 oz.) of creamy base. Mix well. Cover and chill 30 minutes to 1 hour. Enjoy with your favorite chips, crackers or vegetables. If it is too strong for you, thin it down a little or cut back on the Mix.
If you wish to mix it with Olive Oil, re-hydrate the herbal mix in a small bowl with a tablespoon of  water and microwave for 15 seconds. Stir and let rest for about  a minute. Then you can add to the oil. This also helps with Cream Cheese. The other items have enough moisture to re-hydrate on their own. I’ve had people add it to Mayonnaise as a spread but I haven’t tried it yet.
You can also add this mix to tomato or cream sauces to give them a little extra ZIP.  Add some to your Pizza Dough or sprinkle a little (either the Sauce or the Herbal Mix) on the Pizza before you add the red or white Pizza Sauce.  Start with a little and work your way up. All of our products are very potent! 

pastaGarlic Bread Mix

Mix contents of package thoroughly with 3 sticks (3/4 lb ) melted Butter. (Or your choice of an alternative. You can use as much as a full pound of Butter if you like.) Cut your favorite loaf of bread in half length wise and brush mix on the open loaves just coating them. Bake in a 250° oven for 5 - 10 minutes or you can add some Parmesan or Romano cheese on top and broil for a few minutes. Makes up to 8 loaves.  
You can also use the Butter Mixture as Sauté butter  or brush it on Shrimp or other meats and vegetables for grilling. If you wish to use Olive Oil, re-hydrate as above first. It also makes Great Garlic Burgers.
Refrigerate any leftovers and warm up in the microwave as needed.

pastaGrandma’s RUB

RUB means just that! Sprinkle the contents of the package (or a portion thereof, just enough to coat the meat) and RUB or Pat it in. (Make sure your hands are DRY or it will be a real mess.) Let it sit and Marinade for a few minutes and then Grill.  Better yet, RUB it into the meat and slow cook it in the oven covered at 275° For a couple of hours and then uncovered until fully cooked and lightly browned on the top. Works on ANY type of Pork or Poultry. You will have to adjust cooking times for various cuts of meat. The example given is for Ribs and Small Roasts or Chickens. DO NOT USE on FISH! It is simply TOO strong for fish.
Like Fried Chicken?
Coat a cutup chicken or two with the RUB on both sides over waxed paper (add a little seasoned salt as well). Place chicken in sealed plastic bags for at least two hours, BETTER overnight. The next day, coat the chicken with Krusteaz® pancake mix (I use a brown paper bag) and deep fry until golden brown. Place chicken in a paper towel lined pan in a warm oven until all are cooked and ready to serve.  Enjoy!

pastaGrandma’s Fish Sprinkle

Simply sprinkle a little on your favorite fish. You can also mix it with Butter and brush on any type of fish. As with all of our products, a little goes a long way. Be gentle, fish is delicate. It can be used to Grill, Sauté, Broil or Bake. You can also add it to fish or seafood based soups and stews. 
Try boiling artichokes with some Sprinkle in the water. Use a Tbsp and the same amount of fresh ground pepper add 1/2-1 lemon, juice and peel. Boil till done. + - 1 Hr. 
It is also great in Tuna Salad. Mix 1-2 tsp. with  1-2  Tbsp. of dried diced onion and a 1-2 Tbsp. water. Microwave for 10 Sec. and let sit for a few minutes. Use 2-3 cans of tuna, 1-1½ cups Mayonnaise or  Miracle Whip® or blend them, 1/2 cup each sweet pickle relish, dill pickle relish and the re-hydrated Sprinkle mix. Put all ingredients in a large bowl and mix well. Adjust ingredients to suite your tastes.
You can also try it with Salmon or Chicken Salad. Or even sprinkle some on chicken and sauté. It is also good as a base for Tartar Sauce. Mix like for Tuna and leave out the Tuna ;-).  Other uses for Sauce:Try mixing the Sauce in your favorite Stuffed Mushroom or Lasagna recipes.Add it to scrambled eggs. Dip your Pizza in it.
